My Paleo Chocolate Brownies


Try these for the weekend.

There are indeed more 'paleo' type brownies that you can make, using mostly nut flours (often almond) for those following low carb, GAPS or SDC diets, but for those with budget or nut allergy constraints, these are not exactly falling off the wagon... everything in moderation :)

Megane loves them and she's automatically on very suspicious, hyper-picky mode when she knows its gluten free or has 'weird stuff' in it - having a good sniff and prod before risking a mouthful.

How long do we have to drum it in before weird becomes cool...?

I keep forgetting to take a pic before they're eaten but found one that looks surprisingly similar on the net, just to wet your appetites.

BLEND

  • 1 1/2 cups pitted dates + a bit of honey / stevia or other sweeter if you need it sweeter (taste and see)

  • 1 full block of kerrigold butter - melted

  • 1/2 cup hot water

BLEND IN

6 eggs

BLEND IN DRY STUFF TOGETHER

1/3 cup tapioca starch (poudre Conge)

1/3 cup coconut flour or desiccated coconut

3/4 cup cocoa (I use organic raw cacao)

and 350g Sweet potato mashed up

1/4 tsp salt

1/2 tsp Baking Soda

1/2 tsp Baking Powder

Add nuts and chunks of cooking Lindt for a special occasion which make them amazing!

Pour into a dish as you would brownies.

Cook at 175 for about 20 mins or however you like them.

Variation

The other day I realised I didn't have dates or coconut flour and this worked just as well.

This one does have brown sugar or demerara or light muscovado (sounding much more of a sugar connoisseur than I am)

so the sugar only for that rare treat!

BLEND

  • 5 eggs

  • 1 full block of kerrigold butter - melted in 1/2 cup hot water

  • 1 cup

ADD & BLEND

  • 300g Mashed Sweet Potato

  • 1/3 cup tapioca starch (poudre conge)

  • 3/4 cup cocoa powder (I use organic raw cacao)

  • 1/4 tsp salt

  • 1/2 tsp Baking Soda

  • 1/2 tsp Baking Powder

Add nuts and chunks of cooking lindt for a special occasion which make them amazing!

Pour into a dish as you would brownies.

Cook at 175 for about 20 mins or however you like them.
